Creamed Coconut Squares
Creamed coconut is a coconut paste.
One ingredient : Desiccated Coconut
Process : You put the DC in a milling machine, a colloid grinder. With the over heating, the result is a liquid paste.
This paste is put in a mould, similar as for making ice cubes.
When cooling this paste become solid, as the melting point of coconut fat is approximatively of 23°C.
When you withdraw from the mould, you have the squares.
Creamed Coconut Flakes
For making the flakes, you make big blocks, which you shred.
Both items are packed in 14 kg cartons, and delivered in reefer container, as above 23°C, the solid pieces, turn to liquid form.
They are used for various applications : ice cream, fillings, milk product, curries, sauces, ready meal.
Main point is the flavour. And the most flavoured DC is the Sri Lakan one, due to the local way of cropping the mature nuts.
